In Cajun culture, meals are a family affair that involves the aroma of a slow-cooking hearty
jambalaya or a rich seafood gumbo, with the sounds of laughter echoing throughout the family
kitchen.
Born and raised in Tickfaw, Louisiana, Lady Jambalaya was raised by her beloved grandparents,
Madea and Papa.
From a very young age, Lady Jambalaya was inspired by Madea’s passion for cooking authentic
Cajun meals, as she fed their large family hearty meals full of intense flavors and bold
seasonings. Grandma Madea could whip together a meal with whatever ingredients were on
hand, using just “a little of this, and a little of that” – what was her secret? Lady Jambalaya
couldn’t wait to find out.
By the age of five, Lady Jambalaya began learning how to cook under Madea’s tutelage, following
her around the kitchen with intense interest and curiosity. At the age of seven, Lady Jambalaya
finally got her first chance at the stove, under Madea’s close supervision, and she continues to
honor Madea’s influence within her homemade Cajun dishes to this day.
However, great things often come from humble beginnings, and Lady Jambalaya was reminded of
her status as Madea’s apprentice . . . as she burnt everything, she cooked during that first week
on the stove. Madea patiently reminded her granddaughter “to be a perfect cook. It is important
to watch and learn from those who do it so well”. Always beside Madea, Lady Jambalaya
continued to watch and learn from Madea’s guidance, but impatiently. Although patience is a
virtue, Lady Jambalaya was eager to get another turn at the stove. In time, Madea’s reassuring
words came to pass, and practice became perfect.
Lady Jambalaya was excited to apply her new skills, and she began cooking for her large family
with Madea’s encouraging support. Uncles, aunts, cousins, church friends and neighbors were
delighted to partake in consuming meals with this remarkable seven-year-old. In fact, they would
soon call her Lady Jambalaya. And cooked, she did.
Almost forty years later, family and friends continue to enjoy Lady Jambalaya’s Wild Cajun Meals.
She mastered her cooking skills during humble beginnings in Louisiana, and now shares her
culinary delights with the world, right from her kitchen in the Great State of Texas.
